Good flavor...Let's see how it ages.....Alcohol and Cherry flavor is muted vs what I'd like....This could also be related to lessening the fermentation time....Next time, add another 2 lb can of cherry (sour cherry)....Also, a little spicier vs what I'd like....Cut clove to 1 tsp...and cinnamon and allspice to 1-1.5 tsp
Fermentation: 5 days on primary, 2 weeks on secondary with 1 can sweet cherry....bottle primed....
** Excellent taste!.....but recommend HALF the spices next time, especially the clove....alcohol a little lighter than expected but may be due to next point
** Overcarbinated!.....Do 1-2 week primary and 1-2 week secondary....This is a 4 week beer.....Resorted to unbolting and begging to not lose beer volume....
