Mash Steps

Add Pumpkin with 40 mins left in mash

Special Instructions

1.
Use 9.25 gallons of distilled water
2.
Add the following to mash with 1/2 grain; 1.8 g Gypsum, 1.8 g Calcium Chloride, 4.5 g Epsom salt, 3.6 g Baking soda
3.
Add the other 1/2 of grain and pumpkin goes in the mash
4.
Used 2-14.5 ounce can of pumpkin puree in a fine mesh bag in mash.

Mash for 60 minutes at 152
6.
Mash out at 178 for 10 minutes
7.
Made a yeast starter 2 days before
8.
Fermentation is long and it should finish at 1.024 with this yeast.
9.
Keg condition for 1.5 to 2 months while lightly carbed.
10.
Too much CO2 will scrub the aromas/flavors. Carb at about 2.09 volumes of CO2 or around 6 psi at 36 deg F
