Special Instructions

1.
Heat 4.49 gallons of water to 168 degrees-mash tun warm up. Add ph 5.2 stabilizer.
2.
When mash tun water temp drops to 166 degrees, dough in grains & stir.
3.
Target mash temp is 153 degrees. Mash for 60 minutes.
4.
Heat 4.6 gallons of sparge water to 170 degrees.
5.
At 60 min do iodine check for starch to sugar conversion.
6.
Start vourlof until first runnings are clear.
7.
Slowly drain mash tun completely into boil kettle (note volume collected).
8.
Batch Sparge: Pour the 4.6 gallons of 170 degree water into the grain bed. Stir gently (no foam). Rest 10 minutes.
9.
Re-do vourlof, then slowly re-drain mash ton completely.
10.
Target collected wort volume is 6.4 gallons. Measure with graded dowel stick.
11.
Check OG.
12.
Boil wort. Add 1.5 oz Fuggle Hops x 60 minutes after hot break.
13.
Add 1 lb lactose at 10 minutes left in boil
14.
Add 1/2 cup cacao powder at 10 minutes left in boil
15.
Add .5 oz of Golding Pellet Hops at 10 min.
16.
Add Whirlfloc Tablet at 10 min.
17.
Add coil immersion chiller at 10 min.
18.
Chill wort to 75 degrees, transfer to sanitized fermenter, Check FG, aerate wort, pitch yeast.
19.
Ferment at 65 degrees for 7 days.
20.
Rack to secondary for additional 7-14 days.
