Special Instructions

1.
Standard Guelph Water - let it sit overnight to de-clorify

2.1oz Phosphoric Acid, along with 1% Acid Malt, 1/2tsp Gypsum
3.
Mash at 151 for 60 Minutes
4.
90 Minute boil
5.
Add flameout hops at 175F, hold temp for 10 minutes.
6.
Add 1/10th Oz of Amylo 300 at pitching
7.
Ferment 8 days at 14C, move it up to 18C for two days, then 20C for two days.
8.
Rack, cold crash for at least a week before kegging.
