Mash Steps

Special Instructions

1.
Mash at 65C for 1 hrs
2.
Own roasted Rye grains used
3.
Temp up to 70C for 15 mins
4.
Temp up to 77C pH @ 5.0
5.
Wort recirculated through the grain bed x3 then run off
6.
Sparged at 77C
7.
Bring to boil then hops in as above
8.
1/2 Protofloc added for last 15 mins. of boil.
9.
Wort chiller inserted for 2 min in boil to sterilize
10.
Chilled water passed through wort chiller for 25 mins. (20C)
11.
Final hops in at 75C and left for 10 mins
12.
22lts collected
13.
Yeast added at 22C SG 1.044
14.
12 hrs later fermenting well
15.
Dry hopped with Willamette after three days
16.
Dry hopped with first Citra 6 days after brewing
17.
Racked a week after brewing. SG1.008
18.
Dry hopped with Citra (60 gms)and Cluster (40 gms)
19.
Cold crashed on 15th Feb. for 2 days
20.
Bulk primed with 60 gms dextrose then bottled. (SG1.008)
