Found 2 bulging 3.3 lb cans of "Munton and Fison Dark Hopped Malt Extract" and 1 lb "Munton & Fison Black Grain Malt" from 1995 stored in the basement at room temperature and Morris Hanbury Fuggles whole hop pellets (also from 1995) stored in a freezer. Decided to make some beer.

This recipe was cloned from Lil Nugget Ale.

Mash Steps

Special Instructions

1.
Bloom yeast in 1 cup of 80F water.
2.
Crush the Black Grain Malt grains.
3.
Put grains in mesh bag in 2.5 gallons hot water in 20 qt pot.
4.
Drain bag of grains and heat pot to boil.
5.
Steep grains 20 minutes at 155F
6.
Stir in 6.6 lbs of liquid malt extract, add 1 lb dry amber malt.
7.
Bring to boil again and add 2 oz Fuggle whole hop pellets.
8.
Boil 60 minutes.
9.
Chill wort to 100F in sink.
10.
Pour wort into 6.5 gallon primary fermentor, through strainer.
11.
Fill to 5 gallons with cold water 56F.
12.
Pitch yeast at 72F and stir/aerate.
13.
Seal fermentor with fermentation lock.
14.
Ferment 7 days at room temperature.
15.
Rack to secondary fermentor, condition 2 - 4 weeks.

Notes:

Compared it directly to Guinness stout. Carbonated manually with CO2 in 2 liter bottle. Rich mouthfeel for the 23 year-old extract brewed beer. Guinness has a dryer finish of course. 23 yr stout has slightly tangy flavor. Tastes good. No complaints.
