A light-ish German ale that highlights Kolsch malt and a bit of hoppiness from some of my favorite German hops. It's meant to be right on the edge of sweet/balanced.

Notes:

I have had a bunch of these beers since my last official tasting. For a while, I was worried that the hops were a bit too intense for the rest of the beer. Similarly, I worried that the balance was off from what it should be (it ended up being significantly stronger than was intended). There are noticeable differences between this and previous versions, but it's still mostly malty with a hint of hops to balance on top of yeast. It remains a great flavor combination. Just that 5% of Munich malt rounds the corners of that otherwise gloriously grainy Kolsch malt. This was a combination I stumbled upon and still love. The hops, just are almost a hybrid of EKG's and Noble German hops. They elevate the entire production, elegantly. The beer tastes malty, but I want more and more. That's what I want from a beer like this.

Notes:

At bottling, my sample is a nice, clear, light gold. Smells and tastes slightly bready. I can notice the fact that it's a lot stronger than it was meant to be, but I'm not sure how that will age into the finished beer now that it's in the bottle. We'll see.
