Special Instructions

1.
Add 15 ml of lactic acid to 8.6 gal of water and heat to 152°F, add grains and mash at 146°F for 30 minutes.
2.
Deconcoct 116 oz of mash, added back to pot and mashed for 30 min at 152°F for 30 minutes.
3.
Remove grains and boil for 90 minutes adding hops according to schedule.
4.
Fermented at 64°F for 3 weeks. Transferred to secondary and lagered at 35°F for ~1 month.
5.
Let the carboy warm up to room temperature ~64°F for a few days before bottling.
