Special Instructions

1.
Dissolve DME into 1.0 gallons of cool water with 0.50g gypsum, 0.50g CaCl, 0.30g salt
2.
Add 1.1g of yeast nutrient with 15 minutes of boil to go

Add coriander steep for 10 minutes then use ice bath to chill

Oxygenate for 1.5 minutes
5.
Dump 1 gallon of chilled cider into carboy, add warm wort, top up with up to 1 gallon of distilled water
6.
Pitch 125mL of desired yeast
7.
Consider adding cinnamon tincture during bottling

Notes:

Pours 2.5 fingers of long lasting foam, hazy yellow in color. Aroma is a peachy cider along with a bready yeast. Flavor is a muted cider, with the very tart edge taken off. Body is light to medium and the nucleation is somewhat soft. Overall it's pretty good but nothing special, pretty bland. It has lost something since I last scored it. 3 stars as I wouldn't be upset if I ordered this in a bar but I wouldn't order another.

Notes:

Pours about half a finger of foam that dissipates almost immediately, color is slightly pale yellow. Aroma is yeast phenolic and a sort of pineapple fruitiness. Flavor is very fruity and phenolic-y, fruit flavor is hard to pin down though, and then there is a cider tartness that hits at the end but does off quickly. Body is thin but not quite watery with a nucleation sharpness. Overall, I like this beverage even though it has no real precedent in my drinking past. On my enjoyment of it, I'll go with 4 stars, but that doesn't mean much as I don't really have anything to compare it to.
