Oct 21/18 2g CaCl2 and 1g Gyp or Chalk? to BK

Oct 21/18 Added 1/2 cup Tanqueray gin 1oz oak cubes to FV.

Oct 21/18 28C wort into FC set to 26C. Pitched only WLP648 (1.5L starter)
4.
Oct 23/18 Krausen beginning to form but no serious action yet. Added Sacc Brux Trois WLP648 starter.
5.
Oct 27/18 AM, 7th day. SG at 1.016, 68% attenuation. Tasting great, turned FC from 27C to 28C
6.
Nov 4/18 Added 300ml unpasteurised Billy Bee honey and 2 oz Nelson Sauvin hops
7.
Nov 8/18 1.007 at 25C = 1.008. Tasting great. Added 12oz Light Candi Sugar and set FC to 24C
8.
Nov 17/18 Bottling day. Blended 20L 1.008 Ti-Polo with ~4.5L 1.013 MA PEIBC Sour.
9.
Bottling: Added ~50ml 1st use French oak soaked gin.
10.
Bottling: Added 6.6oz dextrose to ~25L for 2.7 volumes. Assuming Brett from Ti-Polo will ferment 5sg points difference in attenuation between beers for 1.1 vol for a total of 3.8 volumes.
11.
Bottling: Added 10ml Pineapple Mint gin.
12.
Total 31x 750ml bottles
