100% filtered NYC tap water.

Strike water additions: 4g gypsum; 5g calcium chloride.

Sparge water additions: 4g gypsum; 5g calcium chloride.

Mash in 149F.

Target mash pH: 5.57

PBG: 1.010

1 caramelized pineapple (roasted at 350 in tin foil).

Add 1 vanilla bean.

Preacidify wort with 12.5 ml of lactic acid.

Flame out.
13.
Hop stand: 165F for 20 minutes; 1oz Azacca; 1oz Motueka.

10g orange zest.
15.
5g nutmeg.
16.
Cool wort to 100F and transfer to primary fermenter.
17.
Target OG: 1.054
18.
Actual OG: 1.051
19.
Pitch L. planterum after wort falls below 115F.
20.
Sour wort in a warm place for 48-60 hours.
21.
Pasteurize sour wort at 170F.
22.
Cool to sour wort 65F.
23.
Pitch London Ale III.

Day 4: 2nd round of bioconversion dryhopping.
