All Grain New World Cider homebrew recipe. This homebrew recipe uses the following ingredients: Gallon Apple Cider/Juice, Brown Sugar - US, cans of blueberry pomegranate concen, Lalvin EC-1118 Champagne Yeast 18% Homebrew Yeast.

Curious to know if pasturizing or cold crashing was used to retain any of the sweetness?

Both. I always cold crash before kegging and a I add a bit sulfates to stop the yeasties from chewing on the additional sugar from the back sweeting. Add the three cans post fermentation.
