Notes: back to no boil. Pasteurization rest at 160, hops in when the bag is removed. Probably lower OG due to larger batch because no boil off. Chilled down to about 90. There was a very full fermenter and a lot of residual. Gravity is super low. Both dry hops fell quickly but really did well to saturate thy sample from the fermenter. Carbing while I'm out of town at 10 psi.

Review: This didn't work. I think it's DMS or a wild yeast. The lager yeast character is not there, it's much drier than expected, there no real hop presence, and there's definitely a vegetal type note in the background. First dump in since the sour beer experiment. A shame because the sterling hops really did taste cool. Something may have happened in the kegging because up until then it was pretty good.
