Dough in @ 110 F for 15 min then raise temp to 150 for 60 min

Make sure over pitch yeast to keep banana/bubblegum flavors @ a minimum

Ferment @ 62 degrees for 3-4 weeks

bottle with 3 oz corn sugar per 5 gal. then bottle

Ginger & Sweet Orange added @ 15 min boil
