add oak in secondary , that are innoculated with brett
2.
mash at 144 for an hour to 156 for 30min ,

Brewed 5/6/18 also threw in harvest of yeast bay saison/Brett blend

Set ferment chamber to 66 will let it rise at 24-36 hours
5.
Adding sugar on day 3

secondary on 5/24 , pellicle forming 1.005
7.
7/27 big fluffy cloud like pellicle should be ready for thanksgiving
8.
Bottling this week 6/11/19 2.5 volumes

Notes:

from carboy tastes slightly tart fruity with pineapple but very complex. very similar to a crooked stave i had recently but cant remember the name, also very dry and clean on the palette. will update once it is carbed , bottle conditioned .
