Mash Steps

Special Instructions

1.
Mash in at 160F (2.5gal) let rest for 60min temp will fall throughout hour
2.
Heat Sparge water to 180F (3.5gal)
3.
At end of 60min, drain, wash mash with Sparge water until you get 3.5gal
4.
Bring wort to a Boil, add corn and brown sugar along with syrup
5.
Follow recipe for other additions
6.
Primary ferment 7 days
7.
Rack into secondary fermenter on top of 1/2lb of cream cheese icing
8.
Also add 2 cinnamon sticks at switch to secondary
9.
Check on gravity after another 10 days monitor until it levels for 24hrs
10.
Bottle with preferred priming sugar let condition minimum 14 days

Notes:

After several months in bottles now the drinkability is better, still not my favorite. Cinnamon is predominant and lots of dark flavors. Mouth feel is more of a barleywine than a stout. Will have to rebrew down the road.
