Strike Water Temp - 71.5.Sparge water heater to 78. Was 61 by time to sparge. That was in fermentasaurus in jacket. Added boiling water to bring up to temp. Day 0.5 - first 12 hours difficult to manage temp - 23-24. then got it down to 20Day 6 - raise fermentation temp from 19-20 to 21-22Day 10 - Brix= 5, just above line, maybe 5.1Day 11 - checked beer during day and noticed blind open. Potential light damage since day 6. Day 13 - carbonation started. 22C, 26psi. Agitated twice for 5 min each ...
