Special Instructions

1.
Mash in with 4.5 gallons of water and maintain a temperature of 64 to 66 C.
2.
Mash in with Wheat, Pilsner, and Rice Hulls first until you have reached conversion.
3.
Once conversion is reached, add acid malt and let rest at same temperature for another hour.
4.
Batch sparge to 6.5 gallons, add hops when stated, add coriander, salt, and orange peels with 10 minutes remaining
5.
Ferment in primary for 3 weeks, then transfer to secondary on top of cranberries. Freeze cranberries then thaw and crush and place in clean secondary fermenter and let sit for another week.
