Mash Steps

Special Instructions

1.
Mash 4 hours. Strike @ 63C then @ 60C for 1 hour
2.
Then up to 66C for 2.5 hrs
3.
Then to 70C for half an hour
4.
Temp up to 77C then sparge with water at same temp.
5.
Sugar added just before boiling point
6.
First hops in after 50 mins in after 70 mins boil
7.
Britewort added for last 10 mins. of boil.
8.
Wort chiller inserted for 2 min in boil to sterilize
9.
Final hops in at flame out for 15 mins
10.
Chilled water passed through wort chiller for 25 mins. (22C)
11.
Made up to 5 gals with cold water.
12.
Yeast added at 22C SG 1.058
13.
24 hrs later fermenting well SG 1.036
14.
Racked 3 days after brewing. Tasted, very little bitterness!
15.
Goldong and Citra hop tea made and added
16.
Dry hopped with Citra
17.
7 days later Racked at SG 1.010 then left in barrel
18.
14 days later SG 1.006 bottled with 75 gms brewing sugar.
