Why are you doing a protein rest?

I was using belgian pilsener that I thought might be partially modified. It wasn't so that was unnecessary

Did it affect your brew body or head?

No idea, it was my first run of that recipe and I have nothing to compare to. Head wasn't great though, would probably throw in carapils and do a single mash next time
