Mash Steps

Special Instructions

1.
Mash 5 Hrs. Grain in @ 55C for 1/2 hour
2.
Then1.5 hrs @ 60C then up to 66C for 3 hrs
3.
Temp up to 77C then sparge with water at same temp.
4.
Salts added - 6 gallons collected
5.
Fuggles in at boiling point. Boiled for 75 mins
6.
Hops in last ten mins and at flame out
7.
300gm fresh ginger last 10 mins of boil
8.
Britewort in last 10 mins
9.
Wort Chiller in boil for 2 mins
10.
400gms fresh Ginger last 1 min of boil
11.
I small chilli chopped and in at flame out
12.
Flame out and last hops in for 15 mins
13.
Allowed to stand and steep for 15 mins
14.
Chilled to 20C in 20 mins
15.
Made up to 5 gallons with cold water SG 1.045
16.
SG after 40hrs fermentation SG1.028
17.
After 3 days SG1.018 - Racked
18.
Racked with 200gms peeled and grated ginger
19.
Also added a chopped small chilli and 40gms dry leaf Fuggles
20.
Racked 3 days later off the ginger, hops asd chilli
21.
Bottled 5th Feb with 20 tablets of sweetner added
22.
Bottled at SG0.06

Notes:

A very nice ale with a ginger beer taste. Refreshing - a good summer beer to drink cold. Chili not strong but a hint in the background. Will make this again.
