Special Instructions

1.
Heat 7 gal of water to boiling point in 16 gal boil kettle
2.
Heat 4 gal of water to 155 deg for steeping (kitchen)
3.
Remove steeping water from heat
4.
Put in brew bag and moisten all grains
5.
Cover pot and let steep for 30 minutes
6.
Rinse grains with another 2 gal of warm water
7.
Squeeze brew bag with pot tops to extract max sugars
8.
Let brew bag drain into separate pot and then add to boil pot
9.
Add "tea" to boil kettle for a total of 13 gallons
10.
Add 2 packets of Calcium Chloride
11.
Add 1 teaspoon of Cinnamon (anti-oxident)
12.
Bring kettle to boil
13.
Remove from heat and add extract while stirring
14.
Bring kettle back to boiling for 5 minutes
15.
Begin hop schedule "A" (1 oz Simcoe)
16.
Continue boiling for 40 minutes
17.
Then add hop schedule "B" (0.50 oz Simcoe)
18.
Add 1 teaspoon/5 gal of Irish Moss
19.
Continue boiling for 15 minutes then turn of heat (flame-out)
20.
Then add hop schedule "C" (0.50 oz Simcoe)
21.
Cool wort to 75 degrees within 30 minutes
22.
Take OG hydrometer reading
23.
Transfer wort to 2-5 gallon fermenters (top off if needed)
24.
Stir wort vigorously to add oxygen
25.
Pour 1 vial of White Labs Clarity Firm into each fermenter
26.
Pitch 1 dry yeast packet into each fermenter
27.
Stir gently
28.
Seal fermenters
