Mash Steps

Special Instructions

1.
Add fine crushed Carafa just before mashout
2.
Hallertauer, Hersbrucker or Saaz can replace Spalt
3.
Make starter 48 H prior to mash. WLP029 or WY1007 can replace WLP036
4.
Add oxygen
5.
Ferment at 17 C until SG = 1.015. Rise temp if needed
6.
Transfer to keg or clean bucket, gradually lower temperatures to 2 C. Make sure some yeast comes along.
7.
After 2 weeks – transfer to new keg. Lager for 4 weeks at 2 C before bottling.
