1.Bring 30qt water to strike temp of 165
2.Add all grains to strike water and mash for 60m maintaining ~155 mash temp
3.Heat sparge water (10 gal) to 175
4.Mash-Out-add 200 deg water to mash while stirring to reach 168 mash temp
5.Collect first runnings and recirculate until wort runs clear
6.Sparge until 6.5 gal of wort is collected
7.Begin boil-add hops as directed with irish moss at final 15m
8.Cool to 70 deg
9.Transfer wort into fermenter and add yeast
10.After fermentation, rack into secondary
11.After 10 days in secondary add 24oz of cold brew concentrate
