Biab mash in 15 litre kettle. Total water needed 14.54 ltrs grain is too much for the kettle. Mash - 12.84 ltrs of water with grain for 60mins mash at 67C. Strike Water at 70.9C. Stir when riding temp. Mash out at 76C for 10mins (stirring) Bring to boil (12.70 ltrs pre boil wort) and add boiling 1.7ltr water (left from initial water needed volume) Cool in Ice sink - took almost 2hrs! Lots of trub. More water next time Pitched at 21C (room temp 21-23c) Add to demijohns 6g of yeast Bottled 1 demi john after 2 weeks and 2 days.

Notes:

Tasted 5 days after bottling which is early. Thick and smooth. Long bitter finish. Chocolate and Malty flavour. Slight berry fruit flavour from the Simcoe, black berries maybe. Clean fermentation. Thick head and good retention. Next version will have slightly less oats. Maybe add some roasted barley instead. A touch of smoke would be nice. Less mid Simcoe addition (10g perhaps).
