Special Instructions

1.
Mash in at 154 degrees.
2.
Cool to 110 degrees.
3.
Add 1 lb. of unmilled Vienna malt.
4.
Hold at 110-120 degrees for 2/3 days.
5.
Sparge.
6.
Pre-boil gravity: 1.048
7.
60 minute boil. Hop to 21 IBU w/ Galena.
8.
OG: 1.052 (A little low. Check efficiency and evaporation)
9.
After primary is complete, add french oak, medium toast spirals.
10.
FG: 1.018? Check in a few days.
11.
Carbonate to 2.2 volumes of CO2
