Water chemistry: 0.0 g CaSO4, 7.0 g CaCl, 1.0 g NaHCO3

Water chemistry: 2.0 g MgSO4, 1.8 g Na, 2 g ascorbic acid

Adjust pre-mash water pH = 6.0

Mid-mash pH should be roughly 5.2 to 5.5

30 minutes into mash, remove ? of thick mash for 20 minute decoction.

Make a 1.5 litre starter and ferment at 52 F until 1.020 and then let free rise for diacetyl rest.

Approximately 68 degrees Lintner ... this recipe will successfully convert.
