Special Instructions
1.Make a large starter with dry malt extract a few days before brewing
2.Mash grain for 60 minutes at 154F
3.Sometimes I will take a 1/4 of mash and boil in pot for 20 min, then return the boiled mash to the mash tun.
4.Cool wort to below 68F lower if possible
5.Add large yeast starter and primary ferm at 54F for 10 plus days
6.Rack into keg and begin laggering at 45F for 4 weeks but longer would be best
