Special Instructions

1.
Steep specialty grains at 155F for 15 min in 2.5 gals water.
2.
Bring to boil and add LME and DME.
3.
Add hops at 45 min.
4.
Add pre-boiled, cold water to 4.5 gals. Transfer to fermenter.
5.
Check specific gravity and add additional water to OG of 1.040-1.042.
6.
Shake the wort to aerate, 2 min. Sprinkle yeast on surface and let settle 15 min. Shake wort agin 1 min.
7.
Ferment 7-10 days. Check gravity. FG 1.015.
8.
Move to secondary fermentation for 7 days. FG 1.009.
9.
Add 135g. priming sugar to 1 c. boiling water. Boil 5 min. and cool to 70F. Add to bottling bucket and transfer beer.
