Brew day 4/1/16. Batch sparged. Black Man Yeast B4 Belgian Sour mix (yeast and lacto) in the primary, Brett Lambicus was pitched in the secondary (4/20/16). Bottled 11/3/16 with priming sugar and a bit of CBC-1 yeast. OG was 1.048. FG was 1.006. pH was 4.5.
Even though I primed this one with corn sugar and CBC-1, it still hasn't fully carbed up yet. The low FG (from the Brett) plus the lack of CO2 results in a soft and thin body. Nose is great: Fresh grains, light barnyard, herbs and flowers. Flavor is lacking. There are hints of funk, but they're mild. Sourness is very mild. Apparently the lacto never took hold before the sacch (and then Brett) started taking off. Hopefully it will continue to sour up, develop more funkiness, and carbonate more in the bottle. May have to set this aside for many months or a year.
