Wow, this came out to be 8.5% ABV after 16 oz of E.W. bourbon and toasted oak cubes were added. At first, it was heavy on the bourbon aroma and flavor. Still quite drinkable for an 8.5% beer (if you like bourbon). Now, after an additional month of bottle aging, it tastes much better. More like good porter, less like bourbon. Now more oak notes coming through. Still strong ETOH. Next time: less ABV and half or no bourbon added (? just soaked oak cubes), little more hops, less LME or maybe all grain, and swap pale chocolate for chocolate malt + swap crystal/caramel 80 for 120.
