I'm using yeast I collected from a brewery in Erie, pa. It is a Belgian yeast bottled with Brett, so I decided to mash higher to create more dextrins for the Brett yeast to chew on after the Belgian yeast gets done. I'm brewing tonight and plan on letting it sit for a few months. Ill let you know how it turns out!
