Cover w/CO2 blanket / saran wrap

Hold temp @ 117°F for 3 days

2/13: Vorlauf, sparge, 6.6G into the boil kettle

60min boil, 1oz Tettnang @ 60min
8.
1oz Coriander, 0.75oz Maldon Sea Salt @ 15min
9.
Chill to 75°F, OG @ 1.051
10.
Into fermenter w/Wyeast Kölsch yeast

2/19: Gravity @ 1.0125
12.
2/21: Gravity @ 1.01
13.
2/21: Bottle conditioned 5G of gose w/1g dry yeast, 180g corn sugar priming

Notes:

AROMA: Lacto, coriander, banana / clove, kiwi, warm spice APPEARANCE: Lemony yellow, opaque, little head retention, small bubbles FLAVOR: Umami, meyer lemon, salt, cereal / malty sweetness, juicy, subtle coriander notes MOUTHFEEL: Zippy bubbles, soft mineral notes on finish, bubbles fade out OVERALL: Good. Would like to dry it out a bit, and add a touch more acidity, a bit more carbonation
