2.Cool to 117°F
3.Add unmilled Vienna malt
4.Cover w/CO2 blanket / saran wrap
5.Hold temp @ 117°F for 3 days
6.2/13: Vorlauf, sparge, 6.6G into the boil kettle
AROMA: Lacto, coriander, banana / clove, kiwi, warm spice
APPEARANCE: Lemony yellow, opaque, little head retention, small bubbles
FLAVOR: Umami, meyer lemon, salt, cereal / malty sweetness, juicy, subtle coriander notes
MOUTHFEEL: Zippy bubbles, soft mineral notes on finish, bubbles fade out
OVERALL: Good. Would like to dry it out a bit, and add a touch more acidity, a bit more carbonation
