I bought some ingredients for a simple pale ale. I am living in Dushanbe, Tajikistan and cannot easily get LME. So, I am learning how to make beer using DME. This will be my first learning attempt.

Special Instructions

1.
Put 3 gallons of water into your kettle and put it on the burner. Turn on the heat. Dissolve 3 lbs. of DME into the water. Add the crushed malts to the mixture after the DME is fully disolved.

Steep the mixture and malts for 60 minutes at 160F.

At the 60 minute mark, remove the malts. Bring the wort to a boil.
4.
Once a roiling boil has been reached remove the pot from the burner and add the other 3 lbs of DME. Once the DME is fully disolved put the pot back on the burner and get it back to a boil.
5.
Put the Centennial bittering hops in and boil for 45 minutes.
6.
After 45 minutes remove the Centennials.
7.
At the 50 minute mark add the Cascade aroma hops.
8.
At the 55 minute mark add the Whirlfloc tablet.
9.
At the 60 minute mark turn off the heat and cool the wort down to 70F as quickly as possible.
10.
Transfer the wort to the fermenter and top off with enough water to have 5 gallons.
11.
Add the yeast. Seal the fermenter. Agitate the fermenter for 5 minutes.
12.
Ferment in a cool place for 2 - 3 weeks. Ideally, the wort temperature will be between 60F - 65F throughout the ferment.
