This dark, piney beer is inspired by Ben Franklin, who, like Thomas Jefferson, George Washington, and many others in colonial America, brewed beer at home. One recipe reportedly shows him using molasses and spruce. There is something invigorating about the idea of brewing a beer with spruce. The aromatics seem healthy and fresh, as though you’ve just had a snowball fight in a forest. Unless you have a spruce tree in your backyard, it can be tricky to find the right materials. Wait until December, when cut trees arrive in parking lots, on street corners, and in tents outside supermarkets. A clipping off your (or your neighbor’s) Christmas tree will be perfect.
