1.make a large yeast starter
2.dough in 142 F strike water hold for 10 min
3.decoct 20 qts of thick mash and -hold decoction at 154F for 15 min
4.boil-30 min-Stir continuously
5.return to mash to bring to 156F for 45 min
6.mash out 168 F-10 min
7.sparge 168 F to get total volume to start boil-add first wort hop
8.pitch yeast at 48 F- Ferment at 50 F
9.3/4 through raise to mid 60's 1-2 weeks-diacetyl rest- rack to secondary
10.purge head space with CO2-lager to 34 F (for a long time??)
