Special Instructions

1.
To brew this Bohemian Pilsner recipe, mash in at 148F (64C) with 1.5 quarts/pound of grain.
2.
Heat to 161F (72C) and rest for 20 minutes.
3.
Heat to 170F (77C) and rest 15 minutes.
4.
Open ferment at 48F (9C) for 12 days.
5.
Rest 48 hours at 60F (16C), then rack onto enough priming sugar to achieve 2.5 volumes of CO2 in a sealed keg.
6.
Rest at 48F (9C) for two to three weeks before counter-pressure bottling.
7.
Lager at 33F (1C) for 30 days.
