Heat 2.66 gallons of water to 152 F.

Add grains and let steep for 90 minutes.
3.
Raise temperature to 168F and steep for another 7 minutes while stirring.
4.
Add Orange peel and cardemom seeds with 5 minutes left in the boil.
5.
Adjust mash pH to ~5.4 with lactic acid as needed.
