Have you considered 1/2# Carapils for head retention due to the % of wheat in your grain bill?
Also, this might be a good recipe to add 1 oz. of Willamette as a first wort hop. http://www.howtobrew.com/section1/chapter5-1.html

Updated with a pound of carapils and an ounce of Sauvin DH. At 11 lbs, we could cram a double batch in the cylindrical tuns, perfect for a heavy dose of hot weather brew.
