Special Instructions

Heat 10.5 quarts to 164 degrees
2.
Mash at 153 degrees for 60 mins.

Collect 4.25 gallons of wort, add 2.25 gallons and boil for 90 mins

Add hops at times indicated

Dissolve cocoa in hot water add at 15 min remainings
6.
Add sugars, yeast nutrients, Irish Moss with 15 mins remaining
7.
Cool wort, pitch yeast, ferment at 68 degrees
8.
Add chocolate essence in secondary fermentation
