Special Instructions

1.
Steep grains at 165F for 45 minutes in 2.5 gal. of water.
2.
Remove grains and bring wort to boil.
3.
When wort reaches 100C add DME.
4.
Add hops and boil for 45 minutes.
5.
At 45 min. remove hops bag.
6.
With 5 minutes left add 1 lb. of honey and Whirlfloc tablet.
7.
At end of 60 minutes cool wort as quickly as possible. You are aiming for 75F.
8.
Transfer wort to ferment bucket. Add 3 gallons of cold water.
9.
Sprinkle the yeast on top of the wort and seal the bucket.
10.
Agitate the bucket for 5 minutes.
11.
Put the airlock on the fermenter and put the bucket in a cool, dark place.
12.
Ideal fermentation temperature is 65 - 68F
13.
Ferment for 14 - 21 days; even after active bubbling has stopped, let the ferment process continue.
14.
Bottle the beer. Don't forget to add priming sugar solution to the bottling bucket!
15.
Let beer bottle condition for 6 weeks. You can 'test' one during week 4 to make sure carbonation has occurred.
