Special Instructions

1.
Steep grain (pale malt and honey malt) in 1 gal of spring water starting at room temp.
2.
Once water reaches 180F, remove grain and add in the 1 quart of grapefruit juice.
3.
Once water reaches a full rolling boil, add in LME while stirring to ensure that it adequately dissolves.
4.
Bring water up to boil again and once boiling strong for a few minutes, add in 0.3oz of Amarillo hops for a 45 minute boil.
5.
Add 0.7oz of Amarillo hops for a 15 minute boil.
6.
When the 45 minute boil is complete, turn off burner and add in 4oz of Mandarina Bavaria hops during the flame out.
7.
Immediately begin to chill down to 80F.
8.
Once cooled, transfer to fermenter, top off with water, pitch in yeast, aerate and leave to ferment for 2 weeks.
9.
Add 2oz of Mandarina Barvaria hops during peak fermentation (~48hr mark).
10.
Add 2oz of Mandarina Barvaria hops during day 8 of fermentation as well as grapefruit zest extract.
11.
When the 2 week fermentation period has concluded, sanitize your bottles (12oz), caps, and transfer equipment.
12.
Prepare a corn sugar priming solution by completely dissolving 0.37 cups of corn sugar in 1/3 cup of hot water. Once completely dissolved let it cool to room temp.
13.
Pipette 3mL of the priming solution into each sanitized 12oz bottle.
14.
Fill bottles until there is about 1-1.5 inches of head space and cap.
15.
Let bottles stand and carbonate for two weeks at room temp.
16.
