1.Water chemistry: 0.0 g CaSO4, 7.0 g CaCl, 1.0 g NaHCO3
2.Water chemistry: 2.0 g MgSO4, 1.8 g Na, 2 g ascorbic acid
3.Adjust pre-mash water pH = 6.0
4.Mid-mash pH should be roughly 5.2 to 5.5
5.30 minutes into mash, remove 1/3 of thick mash for 20 minute decoction.
6.Make a 1.5 litre starter and ferment at 52 F until 1.020 and then let free rise for diacetyl rest.
7.Approximately 68 degrees Lintner ... this recipe will successfully convert.
