2.Water chemistry: 2.0 g MgSO4, 1.8 g Na, 2 g ascorbic acid
3.Adjust pre-mash water pH = 6.0
4.Mid-mash pH should be roughly 5.2 to 5.5
5.30 minutes into mash, remove ? of thick mash for 20 minute decoction.
6.Make a 1.5 litre starter and ferment at 52 F until 1.020 and then let free rise for diacetyl rest.
