Mill millet using gap setting of 0.70 mm (.026" - .028")

Mill buckwheat using gap settings of 1.90 mm (.035" - .037")

Mash:

Bring 140 gallons of water to ~168F

Add room temp grain/rice hulls and stir

check mash temp (~168F)

Add 323.4 ml of SEBAmyl 100 & 323.4 ml of SEBAmyl L

Hold mash @ 168F for 120 minutes

As wort is collected, sparge shower over grain to get desired boil volume

@ 15 add Nelson/Mandarina

@ 10 add Nelson/Mandarina

@ 5 add Nelson/Mandarina

@ 0 whirlpool at 165 degrees then add:

@ 0 add hop oil

Dry hop for 3 days
