1.Dec 17/23: Mashed in with 17.95L, 3ml lactic, 2.5g each CaCl2 and CaSO4
2.Hit 671c, 45 minute mash.
3.Sparged with 19L, 3ml lactic, 3g each CaCl2 and CaSO4. Added ~1oz Carafa 3 Special to sparge.
4.Forgot to add yeastex and whirlfloc. Added 1g each at whirlpool. Whirlfloc didn't mix at all.
5.Dec 17/23 1pm: Pitched into 22C wort, into FC set to 21C.
6.Dec 18/23 945pm: Starting to form a krausen.
7.Dec 18/23 3pm: Krausen active with bubbling. FC down to 17C for fermentation.
8.Dec 19/23 9pm: Laser beer at 17.8C.
9.Dec 121/23 9am: Laser beer at 17.5C. FC up to 21C to finish.
10.Jan 03/23: Bottling day! Added 5.23oz to 20.5L at 22C for 2.6 volumes.
