Special Instructions
1.Add 3.5 gallons of strike water at 170F.
2.Mash at 154F for 60 minutes.
3.Remove 1.5qts of wort to kettle.
4.Add 1.5qts of water at 154F. Gently stir into mash.
5.Collect about 1 quart of wort and gently pour back into top of mash Repeat five times.
6.Empty wort into boil kettle.
7.Add 2.5 gallons of sparge water at 179F. Rest 10 minutes. Empty into kettle.
8.Add 2.25 gallons of sparge water at 173F. Recycle per #5 above. Empty into kettle.
9.Boil 90 minutes. Adds hope per above.
10.Add syrup at last 15 minutes. (5oz Treacle converted). Add whifloc at final 5 minutes.
11.Chill to pitch temperature, add to fermenter, pitch yeast.
12.Ferment at 67F for 14 days. Move to secondary after 7 days.
13.Add dry hops and wood chips 5 days before bottling
