Special Instructions

1.
May 21/10: Mashed in with 17L, 3ml phosphoric, 3g CaCl2 and 2 CaSO4
2.
Hit 65C, 45 minute mash.

Sparged with 18.5L, 3.5ml phosphoric, 3.5g CaCl2 and 2.5 CaSO4
4.
Hit 70C. 20 minute rest.
5.
Added 1ml lactic to early boil. Added 5 drops Fermcap to boil.
6.
Added brown sugar at 30 minutes.
7.
May 21/23 1PM: Pitched into 22C wort, FC set to 20C.
8.
May 21/23 1030PM: Already a krausen forming, FC down to 18C with Sumski.
9.
May 23/23 7AM: Laser beer at 19C. Added 1oz Northdown dry hops. Bubbling fast with good krausen.
10.
May 23/23 5PM: FC up to 21C to finish. Krausen has dropped but still bubbling.
11.
May 29/23 6AM: Out of FC to basement to begin cooling.
12.
May 30/23 7AM: Into FC set to -1C.
13.
June 4/23: Bottling day! Added 4.7oz dextrose to 18.5L at 21.5C for 2.6 volumes.
