Oct 16/10: Mashed in with 16.32L, 4ml phosphoric, 3g CaCl2 and 2 CaSO4

Hit 66C, 45 minute mash.

Sparged with 19.16L, 5ml phosphoric, 3.5g CaCl2 and 2.5 CaSO4
4.
Oct 16/22 12 noon: Into FC set to 20C. Pitched into 23C wort as chiller was struggling.
5.
Oct 17/22 6am: Krausen and fermentation has begun. Laser beer at 20.5C. FC to 16.5C.
6.
Oct 17/22 530pm: Laser beer at 17.8
7.
Oct 18/22 6am: Added 1oz of Northdown hops, still actively fermenting but krausen is dropping.
8.
Oct 18/22 6am: Laser at 17.8C. FC up to 18.5C
9.
Oct 18/22 630pm: Laser at 19.5C. FC up to 20.5C.
10.
Oct 18/22 930pm: FC up to 22C.
11.
Oct 23/22 6pm: Began cooling.
12.
Oct 29/22: Bottling day! 20L at 22C with 5.11oz dextrose for 2.6 volumes.
13.
Forgot to rinse the first 8 bottles filled. Rinsed and quickly re-sanitised the rest.
