Special Instructions

1.
Pulled ~2 L decoction after 15 min maltose rest. Pressure cooked on high for 5 minutes.
2.
Added decoction back in and stepped up to 158F with direct heat.
3.
Pitched at 55F, ramped to 65 after 1 week, crashed and kegged after another week.

Notes:

Color and flavor changes from the pressure cooked decoction would be more suitable in a pils. For a Dunkel, could definitely cook 10-15 minutes at high pressure. A double decoction would probably be even more suitable. Finished very dry, but pretty good - 1.005 FG
